For 30 days, I am treating my body like a client.
My name is Crystal Stafford. I am the founder of Jungle Momma, a food and beverage company located in Nosara, Costa Rica.
I started this company in my tiny kitchen, blending dressings and experimenting with ferments, because I was fed up with spending hours reading labels that spanned the length of a 350 ml bottle and contained ingredients that sounded more like chemicals than food.
I wanted to make healthy dressings full of beneficial bacteria that work with leafy green salads to heal the gut — not harm it. I also wanted them to taste really good so my kids would love them too.
Getting a food and beverage company off the ground in Costa Rica is a long procedure. On top of it, I am a mother of three young boys. I teach at their school as a trade for their tuition. I am a humanitarian worker and have spent the last decade working in remote and war torn countries. I am the Director of Social Impacts for Dwela, my husband's design, build, and grow practice, and I am a photographer and musician.
n the eight years since having my first child, I have gained 20 pounds while attempting weight loss through calorie restriction and fasting. My weight has fluctuated between 124 and 145. It goes up and down constantly.
I have damaged my metabolism. In the last 18 months, I have experienced substantial hair loss. My body is inflamed, and my cortisol levels are through the roof.
Something has to change.
The 30-Day Transformation
So I am embarking on my own 30-day transformation.
I have realized the need to center and align with my nutritional philosophy — and to reconnect with my inner wisdom.
This is a 30-day recalibration where I treat my body like a high-value client.
Plant-forward.
Protein intentional.
Hormone aware.
Gut focused.
Scientist mindset.
I am rebuilding strength, increasing lean muscle, balancing cortisol, diversifying plants (30+ per week), and documenting the data — weight, measurements, energy, digestion, mood.
No extremes.
No obsession.
No calorie restriction.
Just real food, structured training, and daily execution.
Today is Day Zero of this transformation.
